Leo's Island (Iloleo) — Serves 1 to 2
Garnishing: Place your favourite tinned tuna (140 g) in the centre of a dinner plate, either on its own or on a bed of salad leaves dressed with olive oil.
Preparation: Generously oil the bottom of a soup plate with olive oil, then beat 3 eggs inside it as if making an omelette.
Cooking: Microwave the eggs in three 30-second bursts until you get an "island" with a soft, runny centre.
Plating: Using a spatula, gently loosen the egg island and slide it over the tuna. If needed, use the spatula to tuck the tuna underneath the eggs.
Îlot Leo (Leo Islet) is a tiny coral islet located in the Marshall Islands in the central Pacific.
In the Marshall Islands—a nation composed of 29 coral atolls and over 1,100 individual islets—many small landforms like Leo Islet are narrow, low-lying motus (vegetated sand/coral cays) resting on the outer reef rim of an atoll.
A few notable context points about islets like Leo in this region:
Naming Conventions: During the mid-20th century (particularly under the U.S. Trust Territory administration and military operations on atolls like Kwajalein, Enewetak, and Bikini), many islets were given short English code names (like Leo, Alice, Bella, or Meck) alongside their traditional Marshallese names.
Geography: Like most islets in the Marshall Islands, it rises only a few metres above sea level, surrounded by white coral sand, coconut palms, and shallow turquoise lagoon waters.
